In this method, whole coffee cherries are sun-dried on raised beds, allowing the sugars and flavors of the pulp to infuse into the bean. The result is a cup with a dense, velvety body, mild and rounded acidity, and a complex, juicy aftertaste. Enjoy rich notes of mature fruits, wine-like fermented nuances, and a lingering caramel sweetness.
