Most decaf is an afterthought — low-grade beans, stripped of flavor along with the caffeine. This isn't that. This is the same Castillo we grow at Finca El Ocaso, at 1,850 meters in Salento, decaffeinated with care so the cup still tastes like specialty coffee.
The sugar cane process. After harvest, the green beans are gently steamed to open their structure, then bathed in a natural compound derived from fermented sugar cane. That compound binds to the caffeine and carries it away — while leaving the sugars, body, and character of the coffee intact. It’s a method born in Colombia, and it’s why this cup keeps its sweetness where other decaf methods flatten it.
In the cup: honey and sweet caramel up front, settling into a smooth chocolate finish. Medium roast, the same profile as the rest of our line — because a decaf shouldn’t taste like a compromise.
